Salkeni Olives {Sorani}

One of the fanciest olive branches in Syria is named {Salkeni}, the name of the olive came from the Salkeni village where it grows. This type of olives has many qualities like its relatively small size and its mild flavor. It can be picked before becoming ripe and it will have a green color then a black color when it is fully ripe. The green unripe olive has a distinguished sour taste which means it goes through a fermentation process before it is ready for consumption. It is mostly served with lemon slices and red hot peppers.

Tofahi Olives {Halabi}

The fruit is big, round, and weights around {1-8 G} and the seed counts for 13% of the weight. The percentage of olive oil in this fruit is between {15-18%} and it is used in fermentation. It gets ripe early between the end of August and the end of September. There are two methods of fermentation for this kind of olive, the Spanish methods and the natural methods.

Kalamata Olives

The Kalamata has a distinctive black color and has shiny and smooth skin. It is a big, full, and round fruit that has the shape of an almond. It was named Kalamata after the city of Kalamata in the south of Greece. It is considered to be a table olive and it is preserved in olive oil or vinegar. It could be bought as black or green. The extracted olive oil from this kind of olive has a smooth earthy taste.

Dried Olives { Dried Black Olive}

This type of olives has a magical flavor and is known for the people of the Levant as {Maton olives}. It has a black color and it is picked from the highest quality farms from our importers. It is dry cured using layers of salt to take out the sour flavor and the dampness out of it then it is preserved in air tight bags.
